Ingredients
500g eye filet beef 500g
mushrooms – mix of anything you like
400ml sour cream
60ml brandy
2 tsp smoked sweet paprika
50g butter
olive oil
salt and pepper
Method
Slice beef into strips and season with salt and pepper.
Slice mushrooms.
Heat a splash of olive oil in a frying pan at high heat then fry beef in batches until they are nicely browned
– approx. 1-2 minutes each batch.
Remove beef to a plate and set aside.
Add butter to the frying pan, turn down to moderate heat and then add mushrooms and fry for approx. 4-5 minutes.
Flambe the mushrooms by adding the brandy, letting it catch light, and allow the alcohol to burn off.
Add Paprika, Beef and sour cream. Stir to combine over a low heat for 2 minutes.
Serve with rice.
We also love this dish with pork tenderloin in place of the beef. Both are delicious!
